13 Weeks!

We made it into the second trimester without any hiccups!
(Other than the incident of the bad mexican food. I can't honestly say I blame that entirely on baby....ew).
Baby is the size of a Peach this week! So cute! She or He has fingernails, taste buds, tooth buds, vocal chords and even little tiny fingerprints!

We went to see the Doctor this week and were able to hear baby Nelsons sweet little heartbeat. The Doctor gave us this big long shbeal about how we shouldn't panic if we don't or can't hear it right away, or if we need to move to ultrasound to see it. (Always comforting). He also explained that it usually takes a few minutes to find it.
Well baby Nelson has the heart of an ox! He barely touched me and BAM! There it was! Totally surprised the Doc! He congratulated us on having such a strong, healthy baby. ("Thank you! Yeah... it was all me...you know... haha...!") Must be from climbing all those rocks or something!
But really that was pretty cool. After finding it so fast he said that it decreases the chances of miscarriage down to 1%. Also, it was a pretty fast little heartbeat... so far the majority of the old-wives tales point to a girl...but we'll see!

There is more of a visible bump this week and seems to be more permanent.
(Not just when I eat). Still feeling awesome and the fatigue is starting to dissipate. Time to get my work-out on!

So here we go into the second tri. If it's anything like the first it will be a piece of cake!

12 weeks!

We made it to the 12 week mark. Most people can't tell that i'm pregnant but according to Josh there is an itty bitty baby bump. I don't really notice it until I eat something.
My belly definitely protrudes after I eat. It is so strange because I never "feel" bloated, but I could eat a salad and my belly seems to bloat.
I can't wait until I have a permanent bump because at the moment it just makes me feel fat. (Silly, I know. Haha). Little baby Nelson is the size of a Plum!

Prego update

So...I should probably stop telling other women this, including especially other pregnant women.
But...this pregnancy has been a piece of cake so far! (Keeping in mind that I am only 12 weeks...lots of time for symptoms to creep in. Knocking on wood it stays this way!)
But really...people ask ALL the time how i'm feeling. Am I supposed to lie? (I might have to with some prego friends for fear of getting punched haha). I feel bad but I have honestly been great!

I didn't really believe I was pregnant until we got our first ultrasound at 9 weeks. I was so excited but it really took me a second of "Oh! There really is something in there!" before it really set in.
No nausea, no heartburn yet. (I have been told that sets in later).
The only thing I have really noticed is little to no sleep, (when I do sleep I have wacky dreams), and being extremely tired during the day. By six I'm ready for bed!  But really, if that is all I have to deal with than I have no room to complain!
I haven't really experienced any consistency with an enhanced sense of smell although, it did happen once!
Josh was making chili in the kitchen one night. While he was cutting up the onion I seriously would have believed him if he said he let of an onion scented grenade in the house! It smelled soooo bad! Since I haven't had any smell enhancing issues before I was thoroughly convinced it was a bad onion! I had to plug my noise and leave the room because of the ridiculously strong scent. It was sickening! He laughed and reassured me that he had just bought the onion the day before, and that he didn't smell hardly anything. It was weird. I couldn't eat the chili either. The onion was all I could taste! I have had Josh's chili and know it to be delicious but that was just bad! The strange thing is that it hasn't happened before or since, and we use onion a lot! Makes for a funny story.

I thought I had morning sickness while I was up in Canada. Mom was making breakfast and I was talking to her at the stove. Mid sentence I realized out of the blue that I needed to throw up....well that turned out to be the flue. The most awful flue I have ever experienced which Josh caught a few hours later, followed by my brother-in-law and a mild case for Craig. The flue was followed by a nasty cold which lasted a good three weeks. Prego immune system? Good times!

Anyways, I feel great! Just thought I would let you know! haha.

Our early Christmas present.

If there is anything I  have learned throughout my life; it has been to rely on the Lord and trust in his plan. Things do not always happen when I want them to and I have learned to accept the Lords timing as my own.
As I have strived to accept the Lords timing in my life I have most often found that when I let go of my wants, stop fighting the process and give my desires completely to the Lord that things almost always work out. Does that mean that I get what I want when I want it? Absolutely not. But things always work out for the better and end up making for a happier life. I most often can see these things in hind-sight and it has become a strong testimony for me that God really does listen and understand me, and that he knows what is best for me. He does want us to have the righteous desires of our  hearts but also sees and understands the full picture and knows the timing that will be best for us in our lives. Sometimes there are lessons we need to learn, principles we need to gain a stronger understanding of, or things we need to first accomplish. If we pray diligently to know and understand his plan it will be revealed to us and we will come to trust in the Lord and his timing. A good lesson for all of us!
As  most of you know Josh and I have been trying to have a baby for some time now. Anyone who  has been in my position knows that this really can be a roller coaster ride of emotions, up and down each month. I am proud of myself for being able to maintain a positive disposition throughout this experience. That is not to say that I haven't had many moments of discouragement, but I knew that the only thing that mattered was the Lords timing, that we would  have a baby when he felt we were ready, and that it would be in the way that he wanted us to accomplish it.
There have been bumps in the road along the way. There were doctors visits, medication and a lot's and lot's of prayers requiring a lot of patience and trust in the Lord.

This December our prayers were answered. For the first time in my life I received a positive ovulation test followed by a positive pregnancy test.

I could not believe it! I actually made Josh take me to the store to buy a couple of more tests thinking this one had to be wrong. Needless to say there were many tears of joy!
We have since been to our Doctor, received our first ultrasound and are just waiting to find out what we are having. We are almost 11 weeks and baby Nelson is due August 15th 2013!! We could not be more thrilled!
We waited until Christmas to announce to our families. We skyped with Dad and Sally, Grandma and Grandpa and waited to tell Mom and Craig in person since we would be joining them for the holidays. We told Josh's family a few days before we left to head up to Canada.
We made a card for all three sets of parents that had a picture of us on the inside holding our test with a little poem that read: Christmas came a bit early this year, we want you to share in our joy. Next summer you'll be Grandparents of three, with a new baby girl or a boy! (That number changed depending on the Grandparents). We also included a little home-made coupon just for fun.



On Christmas day we found out that Dani and Jordan will also be introducing a new little one into their family as well. She is due a little more than a month before me! We are so excited for them and for our kids to be so close in age. I hope that they are able to spend time together despite the distance and travel. Family reunions at the cabin will be so fun in the years to come! I can't wait!

I do not know what the future holds, or what trials we may have ahead of us. All I know is that I will love this little baby for the rest of  my life and I can't wait to meet him or her!

It's been almost a year...woops!

Wow, it has been almost a year since I last updated my blog...
I guess calling this a journal was a bad idea! Have you ever seen my journal? No? Well, 
why would you? Haha. I'm pretty sure that we all know how that goes. I am always placing too much pressure on myself to write consistently and then look what happens!
Oh well haha. I can always try to do better next time...right?

I'm not even sure where to start. This really is more for me than it is for you, and most of you already know what is going on in our lives, but I will give you a re-cap of are last year and try to hit all the major events.
(Major as in I did something out of the regular routine for once...ex: Kassi ate a green olive today! Just kidding...but really...randomness abounds...)

Year in Review: 2012
Josh and I went to Gateway to see the giant Christmas tree lighting and watch Jon Schmidt.


Josh's mom made us an amazing four course dinner on Christmas eve. She is awesome!
I spent a fair amount of time crafting and making Christmas decorations this year. I loved it and its nice to have things that I made myself that make our apartment cozy.

Some of our favorite gifts this year wet:
Josh: Red dot for his AR 15, scope and case for his 22.
Kassi: Kindle touch, sonicare toothbrushes and new boots.

In January I was able to fly down to Spokane so that I could drive to Alberta with my dad.
I got to spend time with mom and Craig, Dani and her kidlets as well as Carlee and Colton.
This was the first time I got to meet sweet baby Violet since her birth in November.
Haylen is a busy little boy and we sure had fun playing and chasing him around.

I get beat up a lot...comes with being the shortest! Haha...
After about 500+ pictures we were able to snag a few normal ones.
 Well...as normal as you can get. He is Dani's son after all... Just kidding. :)
On January 27th my sweet husband turned 29!! We celebrated at Famous Dave's and he blew out the candles on his traditional cinnamon roll "cake." 
His dreams came true when we finally bought him an X-BOX we found on KSL (practically new had only been used a few times). It came with two wireless controllers, the kinect, and both of the Halo games he had been wanting. 
Josh isn't the kind of person to sit there and play for hours so I was never worried about it. He is too dedicated and hard working. Im glad I could get him something fun that he can play after a long day of work.
(It also works for me because I use the kinect to play Just Dance!! Such a fun work out!). 

We often laugh about how young our ward is. On some nights we have the Bishop, the 1st councilor, the Executive Secretary and the Elders Quorum President all playing Halo together...I don't think you would find that in most family wards!


Poor Josh was sick for Valentines day this year, that put a bit of a damper on going out but we just stuck to our usual tradition. 
Every year we make heart shaped pizza and drink Henry Weinhard root beer out of champaign glasses. (Insert giggle here). It may be silly but we love it! haha. We had some trouble with the "heart" shape this year so we had to settle for a heart made out of olives. It still tasted delicious.  I also made some chocolate covered strawberries.
In March we we flew to Texas to hang out with Meisha and the boys while Matt was out of town for work. It was their spring break so we had an entire week to play.
We went to the zoo, the Rainforest Cafe, Lego land, ate some delicious BBQ, played at a trampoline place, went swimming and played on the wii. 
Josh and I tried Monte Cristo sandwiches for the first time. Boy were they good!
The highlight of that trip was getting to meet our nephew Jonathan for the first time. He is such a cute and happy little guy!
In April I turned 23! Josh took me to dinner one night, another night we went out for Pizza with a bunch of our friends and then later that week we had a BBQ.
We also went to check out the new Neptune Park in Saratoga Springs. It is supposed to be the biggest jungle gymn in the United States and there are only three of these in the entire world. This is the only one in the U.S. It was pretty crazy. It really is fun for all ages.


Sometime during the Spring Josh was released as the Elders Quorum President and called to be the 1st councilor in the Bishopric. At the same time my step-dad Craig was also called to the same position. They were both set apart on the same day which was kind of special for them.

Josh was set apart and ordained a High Priest by his father.
When I asked Josh how he felt about this he said "It is weird to think that I will never be an Elder again, I will miss serving them but Im very excited and humbled to be in this position."
I am still currently serving as the secretary in the Primary and loving every minute.

For our anniversary in May Josh and I took a trip to Daytona Florida with Dad and Sally. We had been planning this for a long time so we were so excited! Josh had never been to Florida before and hadn't ever swam in the warm part of the Ocean. 
We made sand castles (which were epic if I do say so myself), climbed to the top of the Ponce de Lions lighthouse, toured an old plantation, saw some scary looking snakes, played in the tide pools, watched some crazy lightening storms over the ocean, ate a pizza the size of a large tire, explored some of the old spanish colonies and the Fort,  boogie boarded to our hearts content on Daytona Beach (we stayed in a condo right off the Ocean), ate shrimp at Bubba Gumps Shrimp Shack and walked on the beach every night.

 We also took a day to go to Universal Studios: Island of Adventure. 
Harry Potter world was sooooo awesome! I almost cried walking down Diagon Alley! (Every muggles dream!) 
We got to tour the castle and ride through the Hogwarts grounds, try some butter beer and walk through all of the shops. We waited in line for the Harry Potter castle ride for 75 minutes! (That's dedication folks!) 
The ride even broke down during that time but opened just as we reached the front of the line. (So glad we stayed in line!) I was determined to get on that thing. I don't think the line ever got shorter than a 60 min wait but boy was it amazing!! I could have spent an entire day just in the Harry Potter area of the park. 

The Hulk roller coaster was by far my favorite! (Besides the wizarding world of course).  By the end of the night the lines had cleared out so much that we went on it three times in a row. We also spent time in the Dr. Seuss Land, Jurassic Park, the Comic Strip, and the Lost World. Poor Josh was so sick by the time we got home but he had an awesome time while we were at the park. 

We ended the night at Hard Rock Cafe and made to bed around 2:30 a.m. (Josh had the spins really bad. Every time he would lay down to sleep he would become almost physically sick. Poor guy gets motion sickness really easily so it made for a rough night).

If I ever need motivation to blog I will just look at this post and remember how time-consuming it is to re-cap a year. Im not even to summer yet! More to come haha!

Borscht (Russian Beet Soup)

Borscht
Ingredients:
5-6 Beets (I usually use 4-5 large beets about baseball size).
5 tbsp butter
2 medium onions, thinly sliced. (I just dice them fairly small)
3 carrots, thinly sliced
3 celery stalks, thinly sliced
6 tomatoes, peeled, seeded, and chopped. (I never seed them I just dice them).
1 tbsp red wine vinegar
1 tbsp sugar (I never add the sugar. Beets and tomatoes are already sweet).
2 garlic cloves, finely chopped
1 bouquet garni- 3 fresh parsley sprigs, 2 fresh thyme sprigs, and 1 bay leaf tied together. (I just throw in a pinch of thyme, parsley and 1 bay leaf...nothing fancy).
5 2/3 cup basic vegetable stock (I always use beaf broth).
1 pound fried ground beef seasoned with salt to taste (can use stewing beef if you want).
salt and pepper to taste.
Sour cream and chopped fresh dill to garnish. (I never had dill to use but it sounds good).

1.) Thoroughly wash and cut of the stems of your beets. Coat in olive oil and individually wrap in tin foil. On a lined cookie sheet roast your beets for 1 to 1.5 hours at 350 degrees, or until you can slide a fork through them easily. (This will save you hours of cooking time).
Let your beets cool some before removing the skins. The skins should peel off fairly easily.
Dice your beets. You could also cut them into strips if you prefer. (Like shoe strings). I like to dice mine so the soup is fairly chunky. 

2.) Melt the butter in a large pan. (I do this right in my soup pot so I don't have to transfer). Add the onions and cook over low heat, stirring occasionally, about 5 minutes or until softened. Add the beets, carrots, and celery and cook, stirring occasionally, for about another 5 minutes.

3.) Increase the heat to medium, add the tomatoes, vinegar, sugar, garlic, and bouquet garni, season with salt and pepper, and stir well, then pour in the basic vegetable stock and bring to boil. (At this point I would add the 5 2/3 cup of hot water and add the beef bouillon according to the directions, stir it in until it dissolves). Add ground beef. Reduce heat, cover, and simmer for 1/2 hour.

4.) Remove pot from heat and let it stand for about 10 minutes. It will be very hot.
Ladle soup into bowls and top each with a spoonful of sour cream, sprinkle with dill if you want to and serve immediately.
And then eat the entire pot because its stinkin' delicious!

Tips:
1.) There is a brand of bouillon at Costco that is much better tasting and so much better for you. It comes in a jar like a jelly rather than cubes and contains no MSG or artificial flavoring. It is called Better than Bouillon, low sodium. Look for it!)
2.) If you don't roast your beets first this soup will literally take 5 hours. Beets are very hard and starchy, they will take a looooooooooooooong time to soften in the soup.
3.) You can really add whatever kind of meat to this soup. I have only ever used ground beef but you can try anything. There are hundreds of ways to make this soup. Try stewing meat if you are up to it, also any other vegetable such as shredded cabbage.
4.) DO NOT WEAR WHITE while preparing or while eating this soup. You will have pink fingers so plan accordingly if preparing for children!! (Beets stain!).

Autumn!

I love the month of October. Although I do not love the meaning behind Halloween I do love decorating my house and joining in the fun festivities.
Josh and I carved pumpkins, after we went with his brother JJ and his wife to the big 12 acre corn maze out at Cornbellies at thanksgiving point. This place would be so fun to take little kids. They have so much going on out there. They have pumpkin patches, hay rides, pig races, bounce houses, fire-pits where you can make smores, tons of Halloween decor (including a carved pumpkin tower), and for the older kids there are several different haunted mazes and walk-throughs. Neither Josh or I are into the haunted stuff so we stuck to the corn maze. It was actually really hard. Good think Josh is smart. He and JJ had it all figured out. I can never tell where we have already been. It really all looks the same to me but they did a good job of remembering which passages to take. (Plus we left rocks in the path to remind us where we have tried). It was a lot of fun. (You can see pictures on my facebook page or on our website.
This was the theme.
This year we had two Halloween parties to go to. The one on Saturday was not a dress up party but it was a lot of fun. We played apples to apples, carved pumpkins, ate caramel apples and watched my favorite Halloween movie Hocus Pocus. It was fun getting to know some of our friends in the ward.
Monday night Josh and I went to another Halloween party at our neighbors. We didn't know any of their friends but it was great getting to know everyone. We played the Newlywed game, Apples to Apples again (super popular around here), and a game called dirty minds. I won't go into that one. (Dad and Sally you would love it...but I will never play it with you!) We laughed, drank mulled cider and stayed up super late. We had so much fun!

We actually dressed up this year! We have always wanted to dress up. In the past Halloween has always been so stressful to me. Costumes are expensive and it felt like too much pressure to find a costume at the last minute. (We always procrastinated lol). Also, the dental offices I worked in always had some sort of theme, which can be fun but it does make it a little bit difficult. I always ended up with something weird and had to waste money on something I didn't want to be. In the long run the whole thing just became stressful.
This year on the other hand we were able to do whatever the heck we wanted with no pressure. It ended up being super easy and way fun! (Also cheap!)
Josh went as a Zombie and I dressed up like a Lion. The only thing we spent money on was a little Halloween make-up palate for about $3.00. More pictures are on the website.
All in all it was a great month. The weather literally turned over night. We had 60 degree weather for trick-or-treaters and it has now dropped down into the 30's. We even had a skiff of snow and I have to say I honestly don't mind. Surprising I know! I am SO ready for Christmas! Josh won't let me set up for Christmas until thanksgiving...can I go with the Canadian one?
I have a list of Christmas cd's I am going to buy this year and can't wait to play them, drink hot chocolate and play in the snow!!
